The real name for this recipe should be “Everything left over the day before the next CSA box arrives soup”, but that was too long and probably not very SEO friendly. Literally this was every last thing in our fridge before we get a nice big box of fresh veggies and fruit tomorrow! You could probably put just about anything in this soup but here is what I used.
Curried Sweet Potato Stew
1 onion – chopped
3 cloves of garlic
2 tbsp fresh ginger
2 cups red lentils
2 sweet potatoes – chopped into cubes
8 new potatoes – chopped into cubes
1 carrot – sliced
1 head of broccoli
1 ear of corn – kernels cut off
2 cups nettles
4 tbsp miso paste
juice from 2 lemons
1 tbsp coconut oil
1.5 tbsp curry powder
1 tsp cumin
1 tsp cinnamon
1 tsp paprika
1 tsp coriander
1 tsp cardamom
9 cups water
Heat the olive oil in a large stockpot. Add the onions and sauté for about 5 minutes. Add the garlic, ginger, curry powder, paprika, coriander, and cardamom and sauté a minute or so more.
Add the water and lentils and prepare other veggies while you are bringing the water to a boil. Add sweet potatoes, new potatoes, and carrot to the soup and simmer for around an hour, covered. At around the 40 minute mark add the broccoli.
Remove from heat and add corn, nettles, miso and lemon juice and let rest for 5 minutes.
