Adapted slightly from YumUniverse’s Protein Power Flourless Black Bean Brownies. These would be great as a little snack before or after a workout. If you want a little energy boost I would also try adding 2 tbsp matcha powder into the mix.
1/2 cup toasted walnuts
1/2 cup toasted almonds
1/2 cup toasted pecans
2 1/2 cups cooked, drained black beans
1/4 cup coconut oil
1/2 cup cacao powder
1 red apple, cored and chopped
5 dates, pitted
2/3 cup vanilla protein powder (I used Vega Sport Performance Protein)
1/2 cup sucanat
1/2 tsp himalayan salt
1 tsp vanilla powder
Preheat oven to 350° F and prep a baking pan by lining it with parchment paper. Real Simplehas a really great technique for doing this.
Toast nuts on a baking sheet in the oven for 8-10 minutes and set aside to cool.
Add all ingredients (except nuts) to Vitamix or food processor and blend until smooth and creamy. I had to use the damper with my Vitamix to get everything blended nicely.
Add the nuts and pulse a few times to lightly chop them up.
Spread the batter into your parchment lined baking pan and bake for 35-45 minutes or until your knife comes out clean. If you like them fudgier, bake them for less time, just let them cool off completely before removing from pan and cutting up.
